These babies are guaranteed to satisfy the sweet tooth!
Frosting:
Mix - 9 Tbsp. soft butter, and 3 rounded cups powdered sugar, while mixing slowly add 3-4 Tbsp. cream, 3 tsp. mint extract, and 3 drops green food coloring. Be sure to add milk slowly so that your frosting isn't too runny.
When you're finished making the frosting...In a small bowl melt 3/4 bag Hershey's Mint chocolate chips and 3/4 bag Premier White Chocolate Chips. Heat in microwave about 3 min. on low, (take out and stir every 30 seconds), stir until chips are all melted and chips are a smooth consistency. Take unused cupcake liners and open up. Take cupcakes out of the freezer and dip the bottom of the cupcake in melted chips, pull cupcake out of the bowl with spatula and put on top of opened cupcake liner. Frost with prepared frosting, then drizzle remaining chocolate on top ( you'll probably need to put chips back in the microwave at 30 second intervals a couple of times during this process. (To drizzle the chocolate I usually take a plastic sandwich bag and just barely snip the corner, put melted chips inside and drizzle. Recipe makes 1 1/2 dozen cupcakes.
I used this cake mix to make them.
They have a creamy chocolate center.
